Zucchini Squash Salad with Lowfat Basil Dressing

Ingredients

Salad

  • 1 Small Zucchini, thickly sliced
  • 1 Small Crookneck (yellow) Squash, thickly sliced
  • ½ Pint Heirloom Cherry Tomatoes, halved or quartered
  • Fresh Basil Leaves, for garnish

Lowfat Basil Dressing

  • ½ C. Nancy’s Organic Lowfat Yogurt
  • 1 ½ tsp. Dijon Mustard
  • 2 tsp. Fresh Lemon Juice
  • 2 Tbsp. Fresh Chopped Basil
  • ½ tsp. Kosher Salt
  • Black Pepper, to taste

Directions

    1. In a blender, combine the ingredients for the lowfat basil dressing and pulse until smooth.
    2. Pour the dressing in the bottoms of four shallow bowls and arrange the cut vegetables on top.
    3. Garnish with fresh basil.
