Ingredients
Salad
- 1 Small Zucchini, thickly sliced
- 1 Small Crookneck (yellow) Squash, thickly sliced
- ½ Pint Heirloom Cherry Tomatoes, halved or quartered
- Fresh Basil Leaves, for garnish
Lowfat Basil Dressing
- ½ C. Nancy’s Organic Lowfat Yogurt
- 1 ½ tsp. Dijon Mustard
- 2 tsp. Fresh Lemon Juice
- 2 Tbsp. Fresh Chopped Basil
- ½ tsp. Kosher Salt
- Black Pepper, to taste
Directions
- In a blender, combine the ingredients for the lowfat basil dressing and pulse until smooth.
- Pour the dressing in the bottoms of four shallow bowls and arrange the cut vegetables on top.
- Garnish with fresh basil.
