Sparkling Raspberry Sauce
- 2 cups Frozen Raspberries
- ¼ cup Sparkling Wine
- 2 tablespoons Cane Sugar
- 2 cups Nancy’s Plain Honey Yogurt
- 2 cups Granola
- 1 oz. Dark Chocolate, shaved
- ¼ cup Fresh Raspberries
Heat the raspberries, champagne, and sugar in a saucepan and bring to a simmer.
Cook for about 5-10 minutes, stirring occasionally until the sugar is dissolved and the raspberries are softened. Reduce heat and continue to stir, until the mixture begins to thicken. Remove from heat and allow to cool completely.
Assemble the parfaits in 4 small glasses. Layer the sparkling raspberry sauce, granola and yogurt in each glass. Garnish with shaved chocolate and fresh raspberries as desired.
