- 1 Medium Sweet Potato, peeled
- Sea Salt
- Black Pepper
- Cayenne Pepper
- 1 Avocado, mashed
- ½ cup Nancy’s Organic Plain Whole Milk Yogurt
- 2 teaspoon Lime Juice
- Sea Salt, to taste
- Cilantro, Red Chili Flakes and Pepitas, for garnish (optional)
Preheat the oven to 350 degrees and prepare a baking sheet with parchment paper. Using a mandolin slicer on a ¼ inch setting, slice the peeled sweet potato vertically. Arrange the sweet potato slices on the parchment lined baking sheet. Sprinkle both sides with salt, black pepper, and cayenne.
Flipping half-way through, bake the seasoned sweet potato slices for 15-20 minutes until just crisp. In a small bowl, whisk together the mashed avocados, 1 teaspoon of the lime juice and sea salt. In a separate bowl, make the yogurt crema by whisking together the yogurt, remaining lime juice and sea salt.
Once the sweet potato slices have crisped in the oven and cooled, Top each with a spoonful of the avocado mixture and drizzle with the yogurt crema. Sprinkle the “toasts” with optional garnishes and serve immediately.
