Ingredients
Muffins
- 1 cup Nancy’s Organic Vanilla Grass-Fed Yogurt
- ½ cup Brown Sugar
- 2 eggs
- 2 cups All Purpose Flour
- 2 teaspoons Baking Powder
- ½ teaspoon Baking Soda
- ½ teaspoon Salt
- 2 Apples, peeled and diced to ½ inch
- 2 tablespoons Organic Cane Sugar
- 1 teaspoon Ground Cinnamon
- ½ cup Chopped Pecans
Topping
- ¼ cup Brown Sugar
- 1 teaspoon Apple Pie Spice
- ½ cup Chopped Pecans
Directions
Preheat the oven to 375 degrees and prepare a standard muffin tin with paper liners. In a mixing bowl, whisk together the Grass Fed Yogurt, ½ C. brown sugar and eggs. Separately, whisk together the flour, baking powder, baking soda and salt. Add the dry ingredients to the wet ingredients and incorporate. Fold the apples and ½ C. chopped pecans into the batter. Spoon the batter into the paper liners. Combine the ingredients for the topping and sprinkle over the batter.
Bake for about 30 minutes, until the tops are browned and a toothpick comes out clean. Allow the muffins to cool slightly before turning them out of the tin.
