Raspberry Clafoutis

Featured Product: Nancy’s Organic Vanilla Whole Milk Kefir 

 

Ingredients

  • 1 ¼ C. Nancy’s Organic Vanilla Whole Milk Kefir
  • 3 Eggs
  • ½ C. Organic Cane sugar
  • 1 tsp. Vanilla Extract
  • ¼ C. All-purpose Flour
  • ¼ C. Finely Ground Raw Almonds
  • 1 tsp. Ground Cinnamon
  • ½ tsp. Kosher Salt
  • 1 Pint Fresh Raspberries
  • Powdered sugar, for serving

 

Directions

    1. Preheat oven to 375 degrees and prepare a glass pie dish with butter.
    2. In a mixing bowl, whisk together kefir, eggs, sugar and vanilla.
    3. Separately, whisk together the almond meal, flour, cinnamon, and salt.
    4. Incorporate the wet and dry ingredients and mix until smooth.
    5. Gently fold the raspberries into the batter before pouring into the prepared dish.
    6. Bake for 30-45 minutes, until firm and golden.
    7. Sprinkle with powdered sugar to serve.
