- 1 ¼ C. Nancy’s Organic Vanilla Whole Milk Kefir
- 3 Eggs
- ½ C. Organic Cane sugar
- 1 tsp. Vanilla Extract
- ¼ C. All-purpose Flour
- ¼ C. Finely Ground Raw Almonds
- 1 tsp. Ground Cinnamon
- ½ tsp. Kosher Salt
- 1 Pint Fresh Raspberries
- Powdered sugar, for serving
- Preheat oven to 375 degrees and prepare a glass pie dish with butter.
- In a mixing bowl, whisk together kefir, eggs, sugar and vanilla.
- Separately, whisk together the almond meal, flour, cinnamon, and salt.
- Incorporate the wet and dry ingredients and mix until smooth.
- Gently fold the raspberries into the batter before pouring into the prepared dish.
- Bake for 30-45 minutes, until firm and golden.
- Sprinkle with powdered sugar to serve.
