- 1 cup Arugula
- ¼ cup Cooked Quinoa
- ¼ cup Nancy’s Organic Cottage Cheese
- ¼ cup Roasted Root Veggies, such as Acorn Squash, carrots, beets
- 1 Fried Egg
- 2 tablespoons Microgreens
- Assemble the greens, quinoa, cottage cheese and veggies in shallow bowl.
