- 2 cups Nancy’s Vanilla 100% Grass-Fed Whole Milk Yogurt
- ½ cup Milk
- 2 tablespoon Honey
- 1 cup Chocolate Chips
- 2 tablespoon Coconut Oil
- 1 teaspoon Vanilla Extract
- ½ cup Chopped Peanuts
*Tip: Keep paper muffin tin liners and a Styrofoam or floral foam block on hand to catch drips and hold assembled pops before serving.
In a mixing bowl, whisk together the yogurt, milk and honey. Pour the yogurt mixture into a silicone mold. Place a wooden popsicle stick into the center of each well. Place the mold in the freezer overnight.
In a glass bowl, combine the chocolate chips, coconut oil and vanilla extract. Stirring every 30 seconds, heat the chocolate mixture in the microwave until fully melted and incorporated. Pour the chocolate into a wide mouthed jar or mug. Place the chopped peanuts in a shallow bowl or a saucer. Remove the pops from the mold. Working one at a time, dip the pops into the chocolate and then the peanuts. Pierce the sticks of the assembled pops into paper muffin tin liners and transfer to a Styrofoam or floral foam block. Serve immediately or freeze.
