Carrot Cake Overnight Oats

Featured Product: Nancy’s Organic Whole Milk Vanilla Kefir

 

 

Ingredients

  • 2 ½ cups Nancy’s Organic Whole Milk Vanilla Kefir
  • 1 ½ cups Rolled oats
  • 1 Small Carrot, grated, plus more for garnish
  • ¼ cup Walnuts, chopped for garnish
  • 2 tablespoons Golden Raisins, plus more for garnish
  • 2 teaspoons Maple Syrup
  • 1 teaspoon Ground Cinnamon
  • ¼ teaspoon Nutmeg
  • ¼ teaspoon Ginger

 

Directions

In a mixing bowl, sift together the oats and spices. In a separate bowl, whisk together the grated carrot, kefir and maple syrup. Combine the wet and dry ingredients. Fold the raisins into the oats mixture. Spoon the oats mixture into 4 small jars. Cover and refrigerate overnight.

To serve, top the jars with more grated carrot, raisins and walnuts, as desired.
