- 4 Russet Potatoes, skins on
- 8 oz. Nancy’s Cottage Cheese
- 1 Avocado, sliced
- 4 oz. Cherry Tomatoes, slices
- Fresh Herbs, chopped
Preheat the oven to 425 degrees. Poke the tops of 4 potatoes with a fork and wrap them in foil. Bake the potatoes for about 1 hour. Remove the potatoes from the foil and allow them to cool slightly. Make one slice lengthwise across the top, and three slices in the other direction. Starting from both ends, gently squeeze down and in, to expose the insides of the potatoes. Fluff with a fork. Top the potatoes with remaining ingredients as desired.
