Avocado Lettuce Wraps with Mango Slaw and Creamy Cilantro Lime Dressing

Ingredients

Creamy Cilantro Lime Dressing

  • ¼ C. Nancy’s Plain Organic 100% Grass-Fed Yogurt
  • 1 Tbsp. Fresh Lime Juice
  • 1 Tbsp. Honey
  • Pinch of Sea Salt
  • 2 Limes, zested
  • ½ C. Cilantro Leaves, finely chopped

Mango Slaw

  • 2 Mangoes, diced
  • 1 Large Carrot, matchstick or grated
  • ½ Green Cabbage, shredded

Wraps

  • Mango Slaw
  • Cilantro Lime Dressing
  • Avocados, thick sliced
  • Butter Lettuce Leaves
  • Cilantro Leaves, for garnish

 

Directions

  1. In a small bowl, whisk together the ingredients for the Creamy Cilantro Lime Dressing.
  2. Add the diced mango, matchstick carrots, and shredded cabbage to the bowl with the dressing. Toss to coat.
  3. Using butter lettuce leaves, assemble the wraps with dressed slaw and sliced avocado.
  4. Garnish with cilantro leaves as desired.
