Cooking and Baking with Nancy’s

Food for Thought – Our Fall Recipe Line Up

Fall is upon us, the morning air is feeling crisper and we’re all getting back into a routine. Lately our tasks seem a bit more focused as we carry out intentions for the day and plan for the months ahead.

We want to support your life and body in balance, including your digestive and immune health, all year around and especially during cold and flu season. So, before you rush out the door for work, flop on the couch after school, or scramble to get something going for dinner, we can lend a hand by sharing a full line-up of fun, fall recipes made with Nancy’s and billions of live probiotics to help side-step illness and keep your digestion in check.

EGG BITES WITH GARDEN VEGGIES AND COTTAGE CHEESEDrive-thru egg bites are especially tempting when you’re in a morning rush, but with a little prep, our homemade version comes together simply and deliciously in a muffin tin with Nancy’s Cottage Cheese and a sprinkling of pre-diced veggies. You can whip these up in 10 minutes on-the-fly or bake them ahead and keep them handy in the fridge.

ZUCCHINI BANANA MUG MUFFINS WITH GRASS-FED YOGURTSay you used your only muffin tin for the recipe above – you can still make this batch-able idea in addition: Zucchini Banana Mug Muffins are simple because you can whisk the dry ingredients in advance. You can even grate the veggies if you like! Just keep all the wet ingredients separate until it’s almost time to head out. Microwave for two minutes in a mug and top with a dollop of Nancy’s Organic 100% Grass Fed Yogurt. You’re out the door with a Mug Muffin in hand – don’t forget to grab a spoon!

SALT CRUSTED BAKED POTATOESFood for thought: a satisfying lunch that includes beneficial ingredients like the live probiotics in Nancy’s can help fuel your brain power throughout the afternoon. Salt Crusted Baked Potatoes are easy to prep ahead and assemble on the go with Nancy’s Cottage Cheese. Likewise, a plain bagel with Nancy’s Garlic & Herb Cream Cheese couldn’t be simpler, and if you have a few minutes on Sunday to slice and pickle a red onion, you’ll be very glad you did!

BLACK BEAN CRUNCHWRAP WITH VEGGIES AND SOUR CREAMIt’s always good to have a couple of go-to snack ideas to stave off hunger after work or school. Not only are homemade Black Bean Crunchwraps healthier than any fast-food option, but they also taste incredible with Nancy’ Sour Cream and if you’re feeling casual about dinner plans, they could even stand in for an evening meal.

LOADED BLACK BEAN NACHOS WITH QUESOIf whole grain chips are more common in your kitchen than tortillas, you could batch up a pot of homemade queso using Nancy’s Organic Cream Cheese. Stacked with garden fresh veggies and salsa, you’d have some very serious nachos to share. Or you could skip the sheet pan altogether, grab those chips, and just dig in!

WINTER VEGETABLES AND FARRO WITH YOGURT AND HARISSACAULIFLOWER MAC & CHEESEThere’s nothing to say that comfort food can’t be nourishing. On chilly weeknights, we love a sheet pan roast with lots of nutritious root veggies. We serve ours in cozy bowls over nutty ancient grains with harissa and Nancy’s Organic Whole Milk Yogurt. Need a little nostalgia? Cauliflower Mac & Cheese is rich in taste and texture with three cheeses and Nancy’s Sour Cream. It’s every bit as good as you remember, with a lot more fiber and vitamin C.

We agree that it’s hard to say goodbye to summer, but we’re excited to carry out plans for the cooler months! We’re grateful that we can eat well regardless of the weather, and we love to share our best ideas for fall and winter wellness with you. As our schedules pick up and so does the rain, we look forward to the productive days ahead and of course, warm, easy nights together.

Happy fall! Live well, and in good health. ❤️ – The Kesey Family & all the folks at Springfield Creamery
