Fall is upon us, the morning air is feeling crisper and we’re all getting back into a routine. Lately our tasks seem a bit more focused as we carry out intentions for the day and plan for the months ahead.

QUICK MEAL-PREP BREAKFASTS
Drive-thru egg bites are especially tempting when you’re in a morning rush, but with a little prep, our homemade version comes together simply and deliciously in a muffin tin with Nancy’s Cottage Cheese and a sprinkling of pre-diced veggies. You can whip these up in 10 minutes on-the-fly or bake them ahead and keep them handy in the fridge.
Say you used your only muffin tin for the recipe above – you can still make this batch-able idea in addition: Zucchini Banana Mug Muffins are simple because you can whisk the dry ingredients in advance. You can even grate the veggies if you like! Just keep all the wet ingredients separate until it’s almost time to head out. Microwave for two minutes in a mug and top with a dollop of Nancy’s Organic 100% Grass Fed Yogurt. You’re out the door with a Mug Muffin in hand – don’t forget to grab a spoon!
SIMPLE, SATISFYLING LUNCHES
