Hello Creamery friends,

As we begin hunkering down for the winter, we can look forward to spending more time indoors, and enjoying meals with family and friends. Anticipating the season, we put our heads together with some of our favorite Northwest chefs and came up with a small collection of delicious recipes for winter entertaining, some old and some new. Nancy's Recipe Column

The holiday season is the best time to warm up the home with the smells and tastes of baked goodies. Fortunately, it's also a season that's brimming with opportunities to share our handmade treats. Coffeecake is one dish people can't

 

seem to resist, and this Yogurt Cranberry Spiced Coffeecake from Wildwood Restaurant's Pastry Chef Michelle Vernier is both delicious and seasonal.

Nancy's Yogurt Cranberry Spiced Coffeecake

Cake:
2.5 oz. soft butter
1 C light brown sugar, packed
2 eggs
2 tsp. vanilla extract
3/4 C Nancy's plain lowfat yogurt
1/2 tsp. baking soda
1/4 tsp. salt
1 1/3 C all purpose flour
1/8 tsp. freshly ground nutmeg
1/4 tsp. ground cinnamon
1/8 tsp. ground ginger
3/4 C fresh cranberries

 

Streusel topping:
2 oz. butter
1/4 C granulated sugar
1/4 C brown sugar
2/3 C all purpose flour

For Streusel: combine all ingredients together with fingertips until loose and crumbly. Set aside.

For the cake: Preheat oven to 350 degrees.

Lightly butter a 10" cake pan. Cut parchment paper to fit the bottom of the pan. Butter the paper.

Cream together butter and sugar with whisk attachment of electric mixer until light and fluffy.

Add eggs and vanilla slowly, scraping bowl often.

Add yogurt and mix until smooth.

Add dry ingredients (baking soda through ginger) and mix until incorporated.

Fold in cranberries with a rubber spatula.

Portion coffeecake batter into prepared pan and smooth top. Sprinkle streusel topping over cake.

Bake for 45 minutes - 1 hour or until golden brown and a toothpick inserted into the center comes out clean.
